Serves 6\u20138.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vetkoek <strong>Ingredients<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">500 g white bread flour (or cake flour)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5 ml (1 tsp) salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 packet (15 g) instant dried yeast<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">125 ml (\u00bd cup) warm water<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">125 ml (\u00bd cup) warm milk<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">30 ml (2 tablespoons) soft margarine<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Curried Mince Ingredients<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 onions, chopped<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">30 ml (2 tablespoons) oil<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">30 ml (2 tablespoons) curry powder<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">10 ml (2 teaspoons) ground coriander<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">500 g beef mince<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 packet (55 g) brown onion soup mix<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">500 ml (2 cups) beef stock<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">250 ml (1 cup) frozen peas<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">250 ml (1 cup) corn kernels<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">45 ml (3 tablespoons) chutney<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Salt and pepper, to taste<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vetkoek Preparation<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vetkoek Preparation<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large mixing bowl, combine the flour, salt, and yeast. Make a hollow in the center.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a separate bowl, mix the warm water, warm milk, and margarine (stir to melt the margarine).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour the liquid into the hollow in the dry ingredients. Gradually draw in the flour until a dough forms.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Turn the dough out onto a lightly floured surface and knead until smooth, satiny, and elastic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Shape the dough into a ball and place it in a greased mixing bowl. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Turn the dough over so that it is lightly coated with oil. Cover with a clean tea towel or cling wrap and let it rise in a warm place until doubled in size.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Curried Mince Preparation<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large skillet, heat the oil over medium heat. Add the chopped onions and fry until soft.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stir in the curry powder and ground coriander; cook for 2\u20133 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the beef mince and fry until browned and crumbly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix in the brown onion soup mix and then pour in the beef stock. Bring the mixture to a boil and let it simmer for 20 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the frozen peas, corn kernels, and chutney. Simmer for an additional 10\u201315 minutes. Season with salt and pepper to taste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Assembling the Vetkoek<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Once the dough has risen to double its original size, gently punch it down (deflating it).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fold the outer edges toward the center and divide the dough into 8 equal portions. Shape each portion into a ball.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cover the dough balls with a tea towel or cling wrap and let them rise for another hour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a saucepan, heat enough oil for deep-frying.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fry the dough balls until golden brown and crispy on the outside and cooked through on the inside. Remove and drain on paper towels.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To Serve<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Using a knife, carefully cut a pocket in each vetkoek (or slice them in half).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fill each vetkoek with a generous amount of the curried mince.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Serve hot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Enjoy this comforting, flavorful dish that brings together crispy bread and savory curried mince!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A hearty South African treat!
