Grease a baking sheet with a little olive oil.<br>Prepare the spinach:<br>In a large skillet, heat 2 tablespoons of the olive oil over medium heat. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chopped red onion and saut\u00e9 until translucent, about 3-4 minutes. Add the minced garlic and saut\u00e9 for another minute until fragrant. Add the spinach:<br>Add the fresh spinach to the skillet and cook until wilted, about 3-5 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"> If using, add the crushed red pepper flakes at this stage. Season with salt and pepper to taste.<br>Mix the batter:<br>In a bowl, whisk together the eggs, milk and flour until smooth. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Season with salt and pepper.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Combine ingredients:<br>Add the saut\u00e9ed spinach mixture to the egg batter.
