Let it sit for 10 minutes, then squeeze out excess moisture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Peel and grate the potato and carrot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mix the Batter:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large bowl, combine the grated zucchini, potato, and carrot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add finely chopped parsley and minced garlic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add eggs, flour, grated cheese, paprika, and black pepper to the vegetable mixture. Mix well until all ingredients are fully incorporated.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cook the Fritters:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat olive oil in a frying pan over medium heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Shape the mixture into small patties or logs.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fry the patties in batches, cooking each side until golden brown and crispy.
