Diet is a major contributor to its development. This condition is increasingly affecting young people, causing great concern. Unfortunately, there is currently no known cure for diabetes. Most treatments focus on blood sugar control, insulin injections, dietary restrictions, and glucose-lowering medications.

If diabetes is left uncontrolled, it can lead to serious complications that affect the nervous system, damage internal organs, and may even increase the risk of cancer.

The tragic death of a 36-year-old teacher from diabetes-related complications highlights the devastating impact of the disease.

The tragic case of Ms. Luong, a 36-year-old teacher

Ms. Luong, a primary school Chinese teacher, tragically passed away at the age of 36 from complications of diabetes. In late 2020, she began experiencing symptoms including fatigue, abdominal pain, and rapid heartbeat. Despite her condition, she did not seek medical attention due to her busy schedule, which included preparing students for exams and catching up on lost time due to COVID-19-related school closures. Several months later, Ms. Luong suddenly collapsed in front of her class. Hospital tests revealed that her blood sugar levels were dangerously high, and she was diagnosed with severe diabetes. Tragically, despite medical intervention, her condition worsened, and she lapsed into a coma. After eight hours of medical care, she died.

“She rarely ate sweets” – How could this happen?

Her husband, devastated by the loss, couldn’t believe it. He tearfully asked the doctors how his wife, who rarely ate sweets, could have developed such severe diabetes.

After examining her daily routine, health workers found that although Ms. Luong avoided sugary foods, some foods she regularly consumed significantly impacted her blood sugar levels:

1. Eggplant (cooked with oil and seasonings)

Eggplant is generally considered a nutritious vegetable, as it’s low in fat and cholesterol while providing significant amounts of protein, calcium, iron, fiber, and vitamins. However, Ms. Luong often cooked eggplant with large amounts of oil and herbs. At 65 kilograms, she was overweight for her 1.5-meter height, and the combination of high-fat cooking and excess weight led to high blood sugar levels and a deteriorating metabolism.

2. White cauliflower (fried in lard)

Ms. Luong often ate white cauliflower, a low-calorie vegetable believed to aid weight loss. However, she cooked it by frying it in lard. While cauliflower is generally healthy, frying it in lard causes it to absorb a large amount of fat, making it unhealthy over time.

Other high-risk foods that contribute to high blood sugar levels

– White bread

White bread is made from refined grains, not whole grains, and its regular consumption can cause a sharp rise in blood sugar levels. It also increases the risk of diabetes.

– French fries

French fries, like most fried foods, are high in fat and carbohydrates. Fats take longer to digest, which leads to a gradual rise in blood sugar levels and keeps them elevated for a long time.

– Canned tomato sauce

Although it’s a common sauce, bottled tomato sauce contains about one teaspoon of sugar per tablespoon. Excessive consumption can lead to high blood sugar levels, so it’s best to limit your intake.

— Canned soups

Store-bought canned soups often contain added sugar, corn syrup, and salt, which can raise blood sugar levels. Making homemade soup from fresh ingredients is a healthier alternative.

– White rice

White rice is a carbohydrate-rich food that breaks down into sugar during digestion. Eating large amounts of white rice can cause significant increases in blood sugar. Diabetics should consider replacing white rice with more vegetables and whole grains to maintain stable blood sugar levels.

In conclusion, diabetes is a serious condition with long-term consequences if left uncontrolled. It’s crucial to make dietary changes and regularly monitor blood sugar levels to prevent complications. Ms. Luong’s case serves as a heartbreaking reminder of how seemingly harmless foods, when consumed in excess or prepared unhealthily, can have dangerous health consequences. By being mindful of what we eat, we can take steps to reduce the risk of developing diabetes and its associated complications.

Diabetes is a dangerous disease associated with numerous complications.
