The ingredients complement each other, resulting in a refreshing cake, especially preferred by children. A cake to my Mona&#8217;s taste &lt;3<\/p>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/retetepapabun.ro\/wp-content\/uploads\/2021\/06\/DSC_0426-scaled.jpg\"><img decoding=\"async\" src=\"https:\/\/retetepapabun.ro\/wp-content\/uploads\/2021\/06\/DSC_0426-scaled.jpg.webp\" alt=\"Cake-with-yogurt-and-berries-1\" class=\"wp-image-16303\"\/><\/a><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Ingredients Yogurt and Berries Cake<\/strong><\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tabletop diameter 22-24 cm<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>6 eggs<\/li>\n\n\n\n<li>6 tablespoons sugar<\/li>\n\n\n\n<li>7 tablespoons flour<\/li>\n\n\n\n<li>2 tablespoons oil<\/li>\n\n\n\n<li>a pinch of salt<\/li>\n\n\n\n<li>a packet of vanilla sugar<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cream<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300 ml 10% fat yogurt<\/li>\n\n\n\n<li>250 g mascarpone or cream cheese<\/li>\n\n\n\n<li>200 ml sour cream for whipping (I prefer Pilos in a box, from Lidl)<\/li>\n\n\n\n<li>130g sugar<\/li>\n\n\n\n<li>3 tablespoons lemon juice<\/li>\n\n\n\n<li>20 g gelatin granules<\/li>\n\n\n\n<li>80 ml water<\/li>\n\n\n\n<li>100-150 g raspberries<\/li>\n\n\n\n<li>100-150 g blueberries<\/li>\n\n\n\n<li>you can also use other fruits<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>decoration<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300 ml sour cream for whipping cream<\/li>\n\n\n\n<li>powdered sugar to taste (I used 2 tablespoons)<\/li>\n\n\n\n<li>a tablespoon of lemon or lime juice<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Syrup<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>300 ml water<\/li>\n\n\n\n<li>2 tablespoons sugar<\/li>\n\n\n\n<li>1\/2 sachet vanilla sugar<\/li>\n\n\n\n<li>a tablespoon of lemon juice<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image\"><a href=\"https:\/\/retetepapabun.ro\/wp-content\/uploads\/2021\/06\/DSC_0450.jpg\"><img decoding=\"async\" src=\"https:\/\/retetepapabun.ro\/wp-content\/uploads\/2021\/06\/DSC_0450.jpg.webp\" alt=\"Cake-with-yogurt-and-berries-2\" class=\"wp-image-16304\"\/><\/a><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Separate the egg whites from the yolks.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mix the egg whites until foamy, with a pinch of salt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When they have increased in volume and the composition is foamy, gradually start adding the sugar. I add 2 tablespoons at a time. After each addition, mix at the highest speed of the mixer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After you&#8217;ve added everything, mix until you can&#8217;t feel any sugar crystals. It will take a while but I said, be patient ;).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">When the mixture is smooth, shiny, and forms spikes to the touch, you can stop this step.&nbsp;<strong><em>Preheat the oven.<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the yolks and mix with a spoon, from bottom to top (not in a circular motion!) until smooth.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sift the flour over the egg white mixture. Add the vanilla sugar. Mix as in the previous step, mixing gently, from the bottom up, finally incorporating the oil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prepare a 22-24 cm diameter cake pan by lining it with baking paper cut to size, after greasing the pan with butter. Press lightly to adhere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour the mixture, level it lightly with a spoon, and then gently shake the pan to level the mixture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place the tray in the preheated oven and bake at 165 degrees until it passes the toothpick test (30 -40 min). Do not open the oven during baking for at least the first 15 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Let it cool and slice it after a few hours. It&#8217;s best to make it the day before using it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Slice it into 3, horizontally.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Syrup Cake with yogurt and berries<\/strong><\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Simmer all ingredients for 2-3 minutes. Let cool.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Yogurt cream<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large bowl, previously kept in the refrigerator with the mixer blades, mix the cold cream with the sugar. First 1-2 minutes on the lowest speed, then increase the speed, add the lemon juice and mix until it gets a slightly thick consistency. Add the mascarpone and mix until smooth. Do not overmix, you risk turning the cream into butter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add 250 ml of yogurt to the bowl (set aside 50 ml) and mix gently with a spatula, from the bottom up.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Hydrate the gelatin in cold water, in a metal bowl, for 10 minutes. Then add the remaining yogurt over the gelatin and place the bowl on a steam bath. Stir until the gelatin is completely dissolved. Let it cool and when it has reached room temperature, add it in a thin stream to the cream, mixing gently on the lowest setting \u2013 just for a few seconds, just enough to incorporate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">From now on you need to move quickly to assemble. Encountering so many cold ingredients, the gelatin will act quickly and slowly the cream will set.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Place the first slice of cake, place a cake ring around it (I also put acetate foil on the inside, it comes off much nicer), drizzle with syrup and pour half of the cream. Distribute the fruit and press lightly with a spoon. Place the second slice of cake, drizzle with syrup then do the same with the cream and the remaining fruit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Next, add the last slice, drizzle with syrup and refrigerate the cake for 5-6 hours or overnight.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gently remove the ring and decorate the cake with well-whipped whipped cream \u2013 if necessary, add whipped cream stiffener.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yogurt and berry cake \u2013 a simple, delicate cake, not at all heavy, suitable after a hearty meal.
