Line a baking tray with parchment paper.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Prepare the Spinach:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Heat olive oil in a pan over medium heat. Saut\u00e9 minced garlic for about 2 minutes until soft and fragrant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add baby spinach to the pan, season with salt and pepper, and saut\u00e9 until wilted. Remove from heat and let cool.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Prepare the Puff Pastry:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cut the puff pastry sheet into 6 or 12 squares, depending on your desired size. Place squares on the prepared baking tray.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Make the Filling:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a mixing bowl, combine cooled spinach, cream cheese, mozzarella cheese, and beaten egg. Season with salt and pepper, then mix until well combined.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Assemble the Pastry Squares:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Divide spinach mixture evenly among puff pastry squares, placing a spoonful in the center of each square.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fold two opposite edges of each square towards the center, pressing tightly to seal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Prepare for Baking:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Brush the tops of the pastry squares with beaten egg yolk for a glossy finish.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Bake:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bake in the preheated oven for 25 to 35 minutes, until puffs are golden brown and pastry is cooked through.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Serve:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Remove from oven and let cool slightly before serving.
