We use ready-made baby puree, which is easy to find at any store. It\u2019s quick and convenient.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients for the recipe:<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Baby food marshmallows<br>\u2022 35 g protein<br>\u2022 35 g sugar<br>\u2022 a pinch of citric acid<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Syrup:<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">\u2022 40 ml of water<br>\u2022 4 g of agar-agar<br>\u2022 100 g of baby puree (I used apple puree)<br>\u2022 120 g of sugar<br>+ 2 tsp of powdered sugar or powder + cornstarch.<br>* recipe for a hand mixer, for a planetary mixer all ingredients need to be doubled.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Marshmallow:<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">First, prepare a sheet of parchment paper and a piping bag nozzle. I use a closed star nozzle with a 1 cm opening. If you don&#8217;t have a piping bag with a nozzle, you can use a small mold.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-5-16-500x281.jpg\" alt=\"\" class=\"wp-image-62522\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">In a thick-bottomed saucepan, add\u00a0agar-agar\u00a0, sugar, water, and puree.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">*Agar-agar can be purchased at confectionery stores or ordered online, choose a strength of 900.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-2-2-3-500x281.jpg\" alt=\"\" class=\"wp-image-62505\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Mix everything thoroughly and put on the stove. Stirring, bring to a boil. Leave to cook to a temperature of 103-105 \u00b0 C or, if there is no thermometer, over medium heat for 5 minutes. I have this mode 6 out of 9.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is important to stir the syrup so that the agar does not stick to the bottom.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-3-1-3-500x281.jpg\" alt=\"\" class=\"wp-image-62506\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">While the syrup is boiling, beat the egg whites with a pinch of citric acid until fluffy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">*Citric acid helps balance flavor, reduces excess sweetness, and stabilizes protein.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gradually add sugar and continue beating until stiff peaks form.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-4-1-3-500x281.jpg\" alt=\"\" class=\"wp-image-62507\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-5-15-500x281.jpg\" alt=\"\" class=\"wp-image-62508\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Return to the syrup and cook until tender.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-6-8-500x281.jpg\" alt=\"\" class=\"wp-image-62509\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Mix the finished syrup thoroughly and pour it into the beaten egg whites in a thin stream, continuing to beat at medium speed.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-7-7-500x281.jpg\" alt=\"\" class=\"wp-image-62510\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">When all the syrup is added, increase the mixer speed to high or maximum and beat for another 2-3 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The marshmallow mass will be airy and dense.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-8-5-500x281.jpg\" alt=\"\" class=\"wp-image-62511\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Now you need to act quickly, as agar-agar hardens at room temperature. Transfer the marshmallow mass to a pastry bag with a nozzle and immediately pipe it.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-9-3-500x281.jpg\" alt=\"\" class=\"wp-image-62512\"\/><\/figure>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/glaznews.com\/wp-content\/uploads\/2024\/10\/scale_1200-10-2-500x281.jpg\" alt=\"\" class=\"wp-image-62513\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Let the marshmallows stabilize at room temperature for 8-10 hours.
