Whether it&#8217;s roasting meat, wrapping a snack for takeaway, or covering a bowl of leftovers, it&#8217;s hard to imagine everyday cooking without it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">However, despite its prevalence, many people never considered why the surface of foil differs: one side is shiny, the other matte. Personally, I only discovered the reason after turning fifty and was shocked to discover that I&#8217;d been using it incorrectly all this time.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/jemchyjinka.online\/wp-content\/uploads\/2025\/12\/scale_1200-29-500x497.jpeg\" alt=\"\" class=\"wp-image-85123\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">It turns out the difference between the two sides isn&#8217;t just a cosmetic or manufacturing detail. It&#8217;s a feature that truly impacts the cooking process.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In this article I will explain how the difference between surfaces appears, what it means and when to use one side or the other.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">How glossy and matte surfaces are formed<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Aluminum foil production seems fairly straightforward, but there&#8217;s a key nuance. The aluminum blank is rolled repeatedly on enormous rollers until it becomes ultra-thin. By the final stage, it&#8217;s so thin that a single roll would simply tear it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Therefore, two sheets of fabric are folded together and passed through rollers in pairs. The result is as follows:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u2022 the side that touches the rollers is polished and becomes mirror-smooth;<br>\u2022 the side that touches the second layer remains rough and matte, since it does not come into contact with the polishing surface.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That&#8217;s the whole reason\u2014no special design, just technological quirks. But it gets even more interesting from here.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Which side is considered the &#8220;correct&#8221; side?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">The answer depends on what task you are working on.<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Oven baking: meat, fish, vegetables.<br>A shiny surface reflects heat better.<br>A matte surface, on the other hand, absorbs and conducts it better.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">\ud83d\udd38 Therefore, if you want the dish to cook faster and heat more evenly, place the matte side towards the food and the shiny side outward.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This is especially useful when cooking large pieces of meat, fish, and potatoes in their skins. This orientation speeds up heating and improves doneness.<\/p>\n\n\n\n<ol start=\"2\" class=\"wp-block-list\">\n<li>If it is important to reduce the heat intensity or avoid burning,<br>then place it the other way around &#8211; with the shiny side inward to reflect the heat back from the product.<\/li>\n<\/ol>\n\n\n\n<p class=\"wp-block-paragraph\">This is done when preparing delicate dishes that should not brown quickly: casseroles, delicate fish, etc.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Storing food in the refrigerator or freezer<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">In this case, there is no fundamental difference, but experts still advise:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u2022 matte side &#8211; towards the food,<br>\u2022 shiny side &#8211; outwards to reflect external heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This way, food stays fresher better and does not absorb foreign odors.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u267b Additional: stickiness and savings<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">The matte surface is slightly rough, so food sticks to it more easily. If avoiding sticking is important, it&#8217;s better to use the shiny side.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if you need special thermal insulation, you can fold the foil in half to get a denser layer.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Is there a real difference?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">For most household scenarios, the differences between the sides are barely noticeable, especially if cooking takes place at temperatures below 200\u00b0C or the food is hermetically sealed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But when cooking dishes that require precision\u2014pork roast, sous vide, chicken a la fran\u00e7aise\u2014choosing the right side can save you 5\u201310 minutes and improve the texture of the food.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I learned about this from a food technologist completely by accident and was stunned &#8211; for so many years I had been using foil at random, not even suspecting that it had a \u201cworking\u201d and \u201cauxiliary\u201d side.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Since then, when baking, I always point the matte side inward\u2014and I have indeed noticed that the dishes have begun to cook a little faster and more evenly.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It might seem like such a small thing, but it can still influence the outcome.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Were you aware of this?
