It turns out aromatic, juicy and pleasantly crunchy. It is worth opening such a jar in winter — and it disappears from the table faster than any other salad. Exactly therefore many housewives have long been sealing it with a reserve.

Ingredients: cucumbers — 2 kg; onion — 500 g; fresh dill — a large bunch; salt — 2 tbsp.; sugar — 3 tbsp.; 9% vinegar — 80 ml; vegetable oil — 100 ml; black peppercorns — 1 tsp.

Method of preparation:

Thoroughly wash the cucumbers and cut into circles about 5 mm thick. If the fruits are large, one can cut them into half-circles. Slice the onion into thin half-rings, finely chop the dill.

Combine all the vegetables in a large bowl. Add salt, sugar, black pepper, pour in the vegetable oil and vinegar. Mix well and leave for 2–3 hours at room temperature. During this time the cucumbers will release juice that will become the base of the future marinade.

Mix the salad once more and distribute it together with the released juice into previously sterilized jars.

Sterilization:

Place the jars in a saucepan with warm water so that the water reaches the “shoulders”.

After boiling sterilize:

jars 0.5 l — 10 minutes; jars 1 l — 15 minutes.

Immediately hermetically seal with lids, turn upside down and wrap with a warm blanket until complete cooling.

Useful tips

For this salad it is better to choose dense young cucumbers without large seeds — they remain crunchy even after several months of storage. If you like a more saturated aroma, put into each jar a small bay leaf and several allspice peas.

Salad “Nezhinsky” combines excellently with potatoes, meat dishes, porridges and simply fresh bread. Having tried it once, many begin to prepare a double portion at once, because until spring such preparations usually do not last.

This material was prepared by the editorial team using artificial intelligence tools.
