These fermented tomatoes with garlic turn out exactly like that: juicy, aromatic, with a light sourness and rich taste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you love homemade preserves without unnecessary complications, this recipe will definitely become one of your favourites.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>What you will need:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 kg of dense ripe tomatoes<\/li>\n\n\n\n<li>1 large head of garlic<\/li>\n\n\n\n<li>A bunch of dill (preferably with umbrellas)<\/li>\n\n\n\n<li>Horseradish, currant or cherry leaves \u2014 optional<\/li>\n\n\n\n<li>A few black peppercorns<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>For the brine:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 liter of water;<\/li>\n\n\n\n<li>2 tablespoons of salt without a heap;<\/li>\n\n\n\n<li>1 tablespoon of sugar.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>How to prepare<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">First prepare the brine. Bring the water to a boil, dissolve the salt and sugar in it. Let it cool completely.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On the bottom of a clean jar or pot put the greens, several cloves of garlic and the pepper. Then tightly pack the tomatoes, alternating them with garlic slices.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour the cold brine so that the vegetables are completely covered. Cover with a lid or a plate with a small weight.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Leave at room temperature for 3\u20135 days. When active fermentation begins and a pleasant aroma appears, move the tomatoes to a cool place or the refrigerator for a few more days.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Little secrets<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>It is best to take medium-sized tomatoes with dense skin.<\/li>\n\n\n\n<li>Do not use iodized salt \u2014 it can spoil the taste.<\/li>\n\n\n\n<li>If you like it spicier, add a piece of chili pepper.<\/li>\n\n\n\n<li>The longer the tomatoes infuse in the cool, the brighter their taste becomes.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Such tomatoes taste wonderful with young potatoes, meat dishes or simply with a piece of fresh bread.
