Cracks, bruises or rotting spots not only spoil the taste, but can also cause spoilage of the whole jar.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Which cucumbers are best suited<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Small \u2014 approximately 8\u201312 cm long.<\/li>\n\n\n\n<li>Firm and elastic to the touch.<\/li>\n\n\n\n<li>With dark green skin without yellowness.<\/li>\n\n\n\n<li>With small pimples and black or dark spines \u2014 these varieties most often remain crunchy after salting.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>A little trick<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Before canning, soak freshly picked cucumbers in cold water for 3\u20135 hours. They will saturate with moisture, become more elastic and better preserve the crunch after sterilization or marinating.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And remember: even the best recipe will not save the preservation if you take unsuitable cucumbers for it. The correct choice of fruits is already half the success, and the second half is careful preparation and quality ingredients.
