After cooking, remove any surplus water and allow them to cool for a little.<br>Vegetables Saut\u00e9d: A little olive oil heated in a pan over medium heat can do the trick. Toss in the grated carrot, minced garlic, and chopped shallot and saut\u00e9 for 5-7 minutes, or until the carrot is softened and aromatic. Let the ingredients cool.<br>In a large basin, mix together the cooked lentils, saut\u00e9ed vegetables, chopped parsley, tomato puree, salt, and black pepper. Mash to blend. For a little texture, softly mash the ingredients using a fork or potato masher.
