Let them cool and peel them.2. Mash the boiled potatoes and mix with salt, pepper, nutmeg, parsley, egg yolks and parmesan.3. Form the mashed potatoes into finger-shaped cutlets. Dip the potato fingers in the beaten eggs and roll them in the breadcrumbs.4. Preheat the vegetable oil and fry the potato sticks for 3-4 minutes or until golden and crispy.
