Let them sit for about 20 minutes to draw out excess moisture and bitterness. Pat the slices dry with a paper towel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cook the Vegetables:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In a large skillet, heat a drizzle of olive oil over medium heat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chopped onion and cook until translucent.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add the chopped green sweet pepper and minced garlic. Saut\u00e9 for a few more minutes until the pepper softens.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Stir in the chopped tomato, black pepper, tomato paste, basil, and paprika.
