Eggplant casserole is easy to prepare, no frying!"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Eggplant Casserole Recipe<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ingredients:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 eggplants<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 teaspoon salt<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 onion<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Olive oil (as needed for cooking)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 green sweet pepper<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3 cloves garlic<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 tomato<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ground black pepper (to taste)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 tablespoon tomato paste<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fresh basil (a few leaves, chopped)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Paprika (to taste)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">100 grams cheese (any type that melts well)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Instructions:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Prep the Eggplants: Cut the eggplants into cubes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"> Place them in a bowl, cover with water, and set aside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Saut\u00e9 Onions: In a large skillet, heat some olive oil over medium heat. Add the finely chopped onion and saut\u00e9 for about 2 minutes until translucent.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook Peppers: Chop the green sweet pepper into cubes and add to the skillet with the onions.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"> Continue cooking for an additional 2 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Add Garlic: Finely chop the garlic cloves and add to the skillet with the other vegetables. Saut\u00e9 until fragrant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Include Tomatoes: Dice the tomato and add to the skillet. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook with the vegetable mixture for another 2 minutes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cook Eggplant: Drain the eggplants and add to the skillet. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Season with salt and black pepper. Cook everything together for about 10 minutes, stirring occasionally.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Flavor with Seasonings: Stir in the tomato paste, chopped basil, and a sprinkle of paprika.
