This dessert, familiar to everyone since childhood, was popular in many places, including school canteens and grocery stores.

Many people think that making choux pastry is a complicated process. Until recently, I thought so too and did not dare bake such cakes at home.

However, when I decided to take this step, the result exceeded all my expectations – the cakes turned out perfect on the first try. And although the process seems capricious, it is actually quite simple if you know a few important points.

These cakes can be a real discovery thanks to their airy cream and incredible lightness. I’ll tell you how easy it is to prepare them yourself.

Be sure to let the eggs come to room temperature before starting.

Cooking process:
Take a saucepan with a thick bottom, pour water into it, add oil and a pinch of salt. You can add a little sugar for a slight sweetness, but I usually don’t do this so as not to interrupt the taste of the cream.

As soon as the mixture boils, immediately add all the flour and stir vigorously. The mass should become homogeneous and begin to lag behind the walls.

Remove the mixture from the heat, transfer to another container to cool until warm – approximately 35-30°C. I usually determine the temperature by touch; the dough should be warm, but not hot.

Gradually add the eggs, mixing each one thoroughly. The dough may seem split at first, but it will soon become smooth and uniform. The number of eggs depends on their size. Often four is enough, but sometimes you may need a little more or less.

When the dough becomes elastic and pliable, transfer it to a pastry bag and form the cakes onto a baking sheet. Use a simple attachment to prevent the dough from cracking.

Bake in a preheated oven at 190°C for about 30 minutes, keeping it uncovered for the first 20 minutes.

Cool the finished cakes, then fill them with cream through a small hole pierced on the side or cut them and fill them with cream with a spoon.

These cakes are the perfect treat for any occasion, be it a tea party or a family dinner.

I’m sure all your guests will love the custard cakes!

Custard pies are a classic that has been delighting with its taste for many generations.
