I tried a new way to cook cabbage: tender cabbage in a crispy and golden-brown batter. This dish is very different from ordinary cabbage pancakes: instead of dough, a delicate batter is used, and the cabbage itself turns out aromatic and very tasty.

Preparing cabbage
The cabbage should not be raw, so it should be blanched until moderately soft. There are two methods for blanching, just like for preparing cabbage rolls.

- First method : completely immerse the head of cabbage in boiling water, gradually removing the top leaves. For convenience, you can use a knife or fork.
- Second method : First remove the leaves and then put them in boiling water.

After blanching, cool the cabbage and cut it into squares, removing the base of the leaf and the thin, torn edge. Place the leaves in a stack of 2-3 pieces, this will be your “cabbage base”. You can make thin products in one layer or taller ones in three layers of cabbage.
Preparing the batter
If you have your own favorite batter recipe, great. It is important that the batter is thin and you like it. Here is my universal recipe:
- 3 eggs
- flour – 3 tbsp.
- 2 tbsp. sour cream
- soda – 100 g
- to taste – salt and pepper

The ingredients can be adjusted based on the thickness of the batter.
You can add spices to taste, for example, a pinch of cumin, paprika for aroma and piquancy, or Italian herbs. The batter can be cooked with water to make it crispier, with soda to make it even thinner and crispier, and with kefir to make it fluffier and taller.
Frying cabbage
Dip the cabbage stacks into the batter until all sides are well moistened. Place the cabbage in a well-heated frying pan and fry on both sides until golden brown and the batter is completely cooked. You can keep the other side covered for a while, but not for too long so that the batter does not become too soft.

Place the finished cabbage on a dish and cover to keep it warm. Although cold cabbage in batter is also very tasty: it can be served as a side dish with any sauce or just like that.

This simple and unusual recipe is really worth trying.
