 Cheesecake with soft crust
Recipe below   Dough ingredients:  1 egg  120 g sugar  250 g margarine (or butter)  500 g flour  3 tablespoons semolina (for protection between the crust and the filling)  2–3 tablespoons cold milk (optional, for tenderness)  1 pinch of baking soda (extinguished with lemon juice)  Filling ingredients:  600 g sweet cottage cheese (well drained)  50 g semolina  50 g flour  150 g sugar  150 g soft butter  2 sachets vanilla sugar  3 eggs  Preparation:

Dough:

Quickly knead a dough of egg, sugar, soft margarine, flour and slaked bicarbonate. If the dough is too crumbly, add 2–3 tablespoons of cold milk. Divide the dough into two equal parts and refrigerate for 20–30 minutes.

Filling:

Mix the cheese with sugar, vanilla sugar, eggs, semolina, flour and soft butter until we obtain a creamy and homogeneous composition.

Assembly:

Roll out the first sheet and place it in a tray (30×25 cm) lined with baking paper. Sprinkle 1–2 tablespoons of semolina, pour the filling and level. Sprinkle 1 tablespoon of semolina again, then cover with the second sheet of dough. Lightly score the portions with a knife.

Baking:

Bake at 180°C for 35–40 minutes, until lightly browned.

After cooling completely, dust with vanilla sugar.
