Delicious and soft leavened cake with fruit for the little ones and adults with a sweet tooth.
A recipe I got from our great-grandmother Stasia. This recipe always makes fantastic, soft, and delicious cakes. My daughter loves them.
Ingredients:
4 cups of flour
1 cup of milk
1 cup of sugar
200 g of butter
25 g of yeast
4 eggs fruit – we also
have strawberries – crumbled:
50 g of flour
25 g of icing sugar
25 g of melted butter
Dimensions of the mould: 24×29 cm
Method:
In a saucepan, melt the butter, sugar, and milk over low heat. Add the eggs to the warm milk and butter mixture and stir (the mixture must be cooled, otherwise the eggs may curdle). Then add the crumbled yeast and mix well. Let it rest in a warm place for about 1 1/2 hours, until foamy (cover with a cloth).
Pour the flour into the foamy yeast and knead (about 10 minutes) until the dough becomes smooth. The dough is quite thin, but there’s no need to add flour. Pour the resulting dough onto a baking sheet lined with parchment paper and let it rest in a warm place.
Meanwhile, prepare the crumble by washing and chopping the fruit. Arrange the strawberries and crumble on top of the cake. Place the cake in a preheated oven at 180°C. Bake for 20 minutes with the oven door ajar, then close the oven and bake for another 40 minutes, until the cake is golden brown.
