I haven’t eaten sugar in a year. A sugar-free energy dessert is a real treasure!

Ingredients:
Assorted dried fruit (about 130g) – cranberries, apricots, prunes, and sultanas
20g quick-dissolving gelatin
50g walnuts
50g peanuts


50g pumpkin seeds
350g ricotta
80g yogurt
Instructions:

If necessary, chop the assorted nuts into smaller pieces and set aside.
Prepare the quick-dissolving gelatin according to the package directions and let it cool slightly.
In a bowl, combine the chopped nuts, walnuts, peanuts, and pumpkin seeds.
Add the cooled gelatin to the bowl and stir well until all the ingredients are coated.


In another bowl, mix the ricotta and yogurt until smooth.
Add the nut and nut mixture to the ricotta mixture and stir until well combined.
Transfer the mixture to serving bowls or dessert glasses.

Refrigerate for at least 2 hours or until firm.
Serve this sugar-free energy dessert chilled and enjoy!
