Crêpes: the basic dough recipe for making sweet and savoury ones and tips for making them elastic

Ingredients:

4 eggs
200 g of 00 flour


300 ml of milk
2 pinches of salt
Vanilla (optional, for sweet preparations)
Seed oil or butter (to grease the pan)

1. In a bowl, whisk together the eggs, salt, milk, and flour.
2. Add vanilla, if desired.
3. Mix well until the batter is smooth and free of lumps.


4. Cover with plastic wrap and refrigerate for 30 minutes.
5. Heat a nonstick pan and lightly grease it with oil or butter.
6. Pour a ladleful of batter into the hot pan, swirling it to distribute the batter evenly.


7. Cook for about 1 minute, or until the edges begin to separate; then, flip the crepe and cook for another 30 seconds.
