Ingredients:
Base
600g watermelon rind
200g sugar
1 lemon juice 1
lemon zest
Preparation:
1. Remove the pulp and green rind from the watermelon slices.
2. Cut the rind into cubes, including the white part with a little of the remaining pulp.
3. Place the cubes in a saucepan, add the sugar, lemon zest, and juice. Mix well and let sit for 30 minutes.
4. Place the saucepan on the stove and cook for 30 minutes.
5. Use an immersion blender to blend everything into a smooth mixture.
6. Cook for another 30 minutes on low heat.
7. Once cooled, pour the jam into sterilized jars.
8. The watermelon rind jam is ready to be consumed or stored.
