INGREDIENTS

1 kg (2 lb) potatoes60 g (¼ cup) grated parmesan¼ tsp nutmeg5 g (2 tbsp) chopped parsleySalt and pepper2 egg yolks3 eggs250 g (2 cups) breadcrumbsVegetable oil for frying
PREPARATION
1 Boil the potatoes (with the skin) until soft. Let them cool and peel them.2. Mash the boiled potatoes and mix with salt, pepper, nutmeg, parsley, egg yolks and parmesan.3. Form the mashed potatoes into finger-shaped cutlets. Dip the potato fingers in the beaten eggs and roll them in the breadcrumbs.4. Preheat the vegetable oil and fry the potato sticks for 3-4 minutes or until golden and crispy. Serve immediately.
