Ingredients:

2 potatoes, peeled and diced
1 onion, chopped
1 bell pepper, chopped
1/2 cabbage, shredded
2 celery stalks, chopped
1 teaspoon dried basil
Salt, to taste
Parsley, chopped (for garnish)
Instructions:
In a large pot, bring about 6 cups of water to a boil.
Add the potatoes, carrot, onion, bell pepper, cabbage, and celery to the boiling water.
Season with dried basil and salt.
Reduce heat and simmer for about 20-25 minutes, or until the vegetables are tender.
Taste and adjust the seasoning if necessary.
Serve hot, garnished with chopped parsley.
