Ingredients:

For the hamburger mixture:
1 teaspoon cracked black pepper
1 teaspoon kosher salt
1/2 onion, diced
1 tablespoon FloorMate burger seasoning (or your preferred steak seasoning)
2 teaspoons flour
1 cup milk
10.5-ounce can cream of mushroom soup with roasted garlic
15-ounce can pinto beans with seasoned pork
For the potato layer:
6 russet potatoes, medium to small, sliced about ¼ inch thick
Salt
For the topping:
1 pound shredded cheese
Instructions:
Preheat the oven to 375 degrees F (190 degrees C).
Make the hamburger mixture: In a large skillet over medium heat, brown the ground chuck, seasoning with black pepper and kosher salt. Drain any excess grease.
Add the diced onion to the skillet and cook until softened. Then, stir in the burger seasoning and cook for another minute.
Stir in the flour and cook for 2-3 minutes.
Pour in the milk and cream of mushroom soup, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 1 minute, or until thickened.
Stir in the pinto beans with their juice. Heat through.
Remove the hamburger mixture from the heat and set aside.
Boil the potatoes: In a separate pot, bring salted water to a boil. Add the sliced potatoes and cook for 5 minutes, or until fork-tender but not mushy. Drain the potatoes and rinse with cold water.
Assemble the casserole: Grease a 9×13 inch baking dish. Spread half of the cooked potatoes in the bottom of the dish. Season with salt.
Pour half of the hamburger mixture over the potatoes.
Sprinkle half of the shredded cheese over the hamburger mixture.
Repeat layers with the remaining potatoes, hamburger mixture, and cheese.
Bake the casserole uncovered for 30-35 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for at least 15 minutes before serving. Top with dollops of sour cream and chopped green onions, if desired.
Tips:
You can use any type of ground meat you like for this casserole, such as ground turkey, ground sausage, or a combination of meats.
If you don’t have FloorMate burger seasoning, you can use another steak seasoning blend or simply add more salt, pepper, garlic powder, and onion powder to taste.
You can also add other vegetables to the hamburger mixture, such as diced carrots, celery, or green peppers.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
