Ingredients:
1 zucchini (250-300 g)
1/3 teaspoon salt
1-2 tablespoons flour (may need more depending on the moisture content of the zucchini)
Salt, to taste
1 tomato, sliced
60 g mozzarella, shredded
Dried oregano and basil, to taste
Instructions:
Prepare the Zucchini:
Grate the zucchini and place it in a bowl. Sprinkle with 1/3 teaspoon of salt and let it sit for about 10 minutes to draw out excess moisture.
After 10 minutes, squeeze the grated zucchini to remove as much water as possible. You can use a clean kitchen towel or cheesecloth for this.
Make the Batter:
In a mixing bowl, combine the squeezed zucchini, egg, flour, and a pinch of salt. Mix well until you have a batter-like consistency. If the batter is too wet, add a bit more flour.
Cook the Base:
Heat a non-stick frying pan over medium heat and add a small amount of oil to coat the bottom.
Pour the zucchini batter into the pan and spread it out evenly to form a round base, similar to a pizza crust.
Cook for about 3-4 minutes on each side, or until the base is golden brown and cooked through.
Add Toppings:
Once the zucchini base is cooked, lower the heat to low.
Arrange the tomato slices on top of the zucchini base.
Sprinkle the shredded mozzarella over the tomatoes.
Season with dried oregano and basil to taste.
Melt the Cheese:
Cover the pan with a lid and cook on low heat until the cheese is melted and bubbly.
Serve:
Carefully slide the zucchini pizza onto a serving plate.
Slice and serve hot.
