These vegetable potato croquettes are delicious baked or fried!

INGREDIENTS

  • 1 kg of potatoes
  • 200 g of carrots
  • 200 g peas (can be frozen)
  • 200 g green beans (can be frozen)
  • 1/4 cup chopped parsley
  • salt
  • pepper
  • 2 eggs
  • 100 g of parmesan
  • 3-4 beaten eggs
  • 2 cups breadcrumbs

METHOD
Boil and peel potatoes and carrots.
Cut the carrots, green beans.
Mash the potatoes, add 2 eggs, salt, pepper, parmesan.
Add the carrots, peas, asparagus, parsley.
Form balls and press with a flat bottom of the cup.
Dip in the egg, then in the breadcrumbs and fry until golden.
