150g (2 cups) oats
30g (2 tbsp) coconut oil
2 egg yolks
25g (2 tbsp) sugar
240ml (1 cup) heavy whipping cream
100g (1/2 cup) chocolate chips (for topping)

Prepare the Oat Mixture:
In a large bowl, combine 150g (2 cups) oats and 200g (1 cup) chocolate chips.
Melt the Coconut Oil:
In a small saucepan, melt 30g (2 tbsp) coconut oil over low heat. Allow it to cool slightly.
Mix Wet Ingredients:
In a separate bowl, whisk together 2 egg yolks, 25g (2 tbsp) sugar, and the melted coconut oil until well combined.
Whip the Cream:
In another bowl, whip 240ml (1 cup) heavy whipping cream until stiff peaks form.
Combine Ingredients:
Gently fold the whipped cream into the egg yolk mixture.
Add this mixture to the oats and chocolate chips, stirring until everything is well combined.
Fill the Cupcake Liners:
Preheat your oven to 180Β°C (350Β°F).
Line a cupcake tray with paper liners.
Spoon the batter into the cupcake liners, filling each about 2/3 full.
Add Topping:
Sprinkle 100g (1/2 cup) chocolate chips evenly over the top of each cupcake.
Bake:
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Serve:
Let the cupcakes cool in the tray for a few minutes, then transfer to a wire rack to cool completely.
