Ingredients:

1 carrot
1 zucchini
2 eggs
Salt (to taste)
2 tablespoons flour
Olive oil (for frying)
Instructions:
Wash and peel the carrot, potato, and zucchini. Grate them using a grater and place them in a bowl.
Add the eggs, salt (to taste), and flour to the grated vegetables. Mix everything well until you get a thick batter-like consistency.
Heat a non-stick frying pan over medium heat and add a drizzle of olive oil.
Spoon the vegetable batter into the hot pan, shaping it into small pancakes or fritters.
Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
Once cooked, remove the fritters from the pan and place them on a plate lined with paper towels to absorb any excess oil.
Repeat the process until all the vegetable batter is used, adding more olive oil to the pan as needed between batches.
