Old-Fashioned Pizza in an Airfryer

Ingredients:

1 eggplant (berenjena)

2 tomatoes

1/2 wedge of Manchego cheese

Extra virgin olive oil

Oregano

Salt

Instructions:

Prepare the Eggplant:

Slice the eggplant into rounds about 1/4 inch thick.

Sprinkle the slices with salt and let them sit for about 15 minutes to draw out any bitterness. Pat them dry with a paper towel.

Preheat your Cosori Airfryer to 180°C (350°F).

Lightly brush both sides of the eggplant slices with extra virgin olive oil and place them in the air fryer basket.

Air fry for 8-10 minutes, flipping halfway through, until they are tender and slightly golden. Remove from the air fryer and set aside.

Prepare the Tomatoes:

Slice the tomatoes into rounds.

Season the tomato slices with salt and a sprinkle of oregano.

Assemble the Pizza:

Place a slice of tomato on each eggplant round.

Grate or thinly slice the Manchego cheese and place a generous amount on top of each tomato-topped eggplant slice.

Sprinkle with additional oregano to taste.

Cook in the Airfryer:

Preheat the air fryer to 180°C (350°F) again if needed.

Carefully place the assembled eggplant pizzas back into the air fryer basket.

Cook for 5-7 minutes, or until the cheese is melted and bubbly.

Serve:

Remove the mini pizzas from the air fryer and transfer to a serving plate.

Drizzle with a bit more extra virgin olive oil if desired.
