400ml warm milk (1 3/4 cups) 200ml warm water (3/4 cup + 2 tablespoons) 40g sugar (3 tablespoons) 11g dry yeast (2 1/4 teaspoons) 100ml vegetable oil (7 tablespoons) 1 chicken egg 1.5 teaspoons salt 950g flour (7 1/2 cups, plus extra for dusting) 1 egg yolk (for brushing) 1 tablespoon milk (for brushing) White sesame seeds (for sprinkling)
Directions:
In a large bowl, combine 400ml warm milk, 200ml warm water, 40g sugar, and 11g dry yeast. Mix well. Add 100ml vegetable oil and 1 chicken egg to the mixture.
Mix thoroughly. Add 1.5 teaspoons salt and sift in 950g flour in parts, mixing until a soft dough forms. Knead the dough on a floured surface until smooth and elastic, then form it into a ball.
Divide the dough into two equal parts and form each into a ball. Place the dough balls on a floured baking sheet, dust with flour, and cover with cling film. Let rise in a warm place for 30 minutes. Roll out each dough ball to a diameter of 37 cm (14.5 inches) and a thickness of 0.7-1 cm (1/4-3/8 inch). Use an 11 cm diameter bowl to cut out buns. Place them on a baking tray lined with baking paper. Cover the buns with cling film and let rise in a warm place for another 20-30 minutes. Preheat the oven to 180°C (350°F). Mix 1 egg yolk with 1 tablespoon milk and brush the buns with the mixture. Sprinkle with sesame seeds. Bake for 20-25 minutes or until golden brown. Let the buns cool slightly before serving.
