Ingredients:
For the Pork Chops:
3 pork chops
1 ½ teaspoon salt
3 teaspoons chopped rosemary
Zest of 1 lemon (yellow part only)
3 cloves of garlic, minced
3 tablespoons parsley (or fennel fronds), chopped
¾ teaspoon fennel seeds
A pinch of chili flakes
1-2 tablespoons olive oil (or other oil) for the chops
1-2 tablespoons cooking oil
For the Filling:
2 tablespoons olive oil
1 medium onion, finely chopped
1 carrot, finely chopped
800 g white cabbage, chopped
Salt, to taste
½ teaspoon paprika
½ teaspoon oregano
½ teaspoon dry parsley
½ teaspoon garlic powder
½ teaspoon dry onion
5-6 eggs, beaten
20-30 g Parmesan cheese, grated (optional)
Instructions:
Prepare the Pork Chops:
Make a pocket in each pork chop for the filling by slicing a deep slit into the side of each chop.
Season inside and out with salt, rosemary, lemon zest, minced garlic, chopped parsley (or fennel fronds), fennel seeds, and chili flakes.
Drizzle with olive oil and let marinate while preparing the filling.
Cook the Filling:
Heat 2 tablespoons of olive oil in a pan over medium heat.
Sauté the finely chopped onion and carrot until they are soft and fragrant.
Add the chopped white cabbage to the pan. Season with salt, paprika, oregano, dry parsley, garlic powder, and dry onion.
Cook until the cabbage is tender, stirring occasionally.
Let the mixture cool slightly, then add the beaten eggs. Mix well and season with salt.
Add the grated Parmesan cheese, if using.
Stuff and Cook the Pork Chops:
Preheat your oven to 180°C (356°F).
Stuff each pork chop with the cabbage and egg mixture, securing with toothpicks if necessary to keep the filling inside.
Heat the cooking oil in a pan over medium-high heat. Sear the pork chops on both sides until they are golden brown.
Transfer the seared pork chops to a baking dish and bake in the preheated oven for about 20-30 minutes, or until the pork is cooked through and the stuffing is set.
