Ingredients:
180g potatoes, grated
135g carrots, grated
40g onion, finely chopped
3 green chilies, finely chopped
1 tablespoon coriander, chopped
1 egg
1.5 teaspoons salt (to taste)
0.5 teaspoon black pepper
5 tablespoons corn flour
Cooking oil (for frying)
Instructions:
Prepare the Vegetables:
Grate the potatoes and carrots using a grater.
Finely chop the onion and green chilies. Chop the coriander.
Mix the Ingredients:
In a large mixing bowl, combine the grated potatoes, grated carrots, chopped onion, green chilies, and chopped coriander.
Add the egg, salt, black pepper, and corn flour to the bowl.
Mix well until all the ingredients are thoroughly combined and form a batter.
Heat the Oil:
In a large frying pan, heat enough cooking oil over medium heat for shallow frying.
Fry the Fritters:
Scoop a spoonful of the batter and shape it into a small patty.
Carefully place the patty into the hot oil.
Repeat with the remaining batter, frying a few fritters at a time without overcrowding the pan.
Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
Drain and Serve:
Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
Serve the fritters hot with your favorite dipping sauce or chutney.
