Ingredients:
Tortillas:
Puff pastry – 500-800 g (2 pcs.) (the thinner the cakes, the easier it will be to cut them in the finished cake)
Powdered sugar – 2 tbsp.
Custard:
Milk – 500 g
Egg yolks – 5 pcs.
Sugar – 100 g
Vanilla sugar – 10 g
Salt – 1 pinch
Cornstarch – 60 g
Butter 82% – 40 g
Whipped cream:
Cream 33% – 500 g
Vanilla sugar – 10 g
Powdered sugar – 2-3 tbsp.
Gelatin – 5 g + water – 25 g
Preparation:
I put two pieces of puff pastry on parchment, roll them out a little on top (22 cm by 27 cm). I prick them well with a fork, sprinkle with powdered sugar. I send them to a preheated oven at a temperature of 220 degrees for 15-20 minutes.
Custard:
I mix the yolks, sugar, vanilla sugar, and salt with a whisk until the mixture becomes light. I pour in 100 g of milk, mix. I add starch, mix. I warmed up the remaining 400 g of milk, poured it into the mixture, and mixed it. I pour the mixture into a thick-bottomed saucepan, put it on the fire, stirring constantly, until the mixture thickens. I remove it from the fire and immediately add the soft butter, mix until smooth. I cover it with cling film and leave it to cool.
Whipped cream:
First, I mix gelatin with water, leave it to swell. I pour cold cream into the mixer bowl, add vanilla sugar and powdered sugar, mix until the mass is thick. I melt the swollen gelatin in a water bath, add it to the cream, mix.
I assemble the cake. I spread the cream on the first cake layer, then the whipped cream and cover it with the second cake layer. I put it in the refrigerator overnight.
I decorate with powdered sugar, delicious!
