Cucumber Egg Salad | So Crunchy

Ingredients:

2 cucumbers

2 carrots

1 red apple

1 onion

1/4 cup of raisins

7 hard-boiled eggs

Mayonnaise to taste

Directions:

Prepare the Vegetables and Fruit: Wash the cucumbers, carrots, and red apple.

Peel the carrots. Dice the cucumbers and carrots into bite-sized pieces.

Core and chop the apple into similar-sized pieces. Finely chop the onion.

Boil and Chop the Eggs: Boil the eggs until hard-boiled, about 9-10 minutes.

Once cooled, peel and chop them into chunks.

Combine Ingredients: In a large mixing bowl, combine the chopped cucumbers, carrots, apple, onion, and raisins.

Add Eggs and Mayonnaise: Add the chopped eggs and mayonnaise to taste to the bowl.

Gently mix until well combined.

Chill and Serve: Chill the salad in the refrigerator for at least an hour before serving.
