Morning biscuits, my grandmother used to prepare them for me: I finally found the recipe I was looking for so long!

Cheese biscuits are   perfect for breakfast, perhaps to accompany a cup of milk, tea or coffee or even to eat in the afternoon as a snack. In fact, they are wonderful, healthy and nutritious treats.

Everyone will love them, so much so that you won’t have time to get them out of the oven before adults and children will be competing, so you can be sure that they will be a great success. They are quite light, they are prepared  without butter and with just 2 tablespoons of oil,  so if you are on a diet you won’t have to worry about eating too much fat.

The preparation is very simple, it takes very little time and above all little effort.

The recipe for cheese biscuits, soft and good to enjoy for breakfast!

Ingredients

  • 250 g of light or protein fresh cheese (ricotta is also fine)
  • 230 g of flour
  • 8 g of baking powder
  • 2 tablespoons of stevia sweetener (or alternatively 2 of normal sugar, maltitol or erythritol)
  • 2 tablespoons of seed oil
  • 1 egg
  • 1 pinch of salt
  • a little vanilla flavoring
  • Enough icing sugar

Preparation

  1. To start, break the egg into a bowl, add the pinch of salt, the sweetener stevia (or sugar, maltitol or erythritol) and the vanilla flavoring and beat adequately with the hand whisk.
  1. Now add the seed oil, mix, add the fresh cheese, mix well, sift and add the flour together with the yeast and  knead with your hands to obtain a smooth, soft and compact dough .
  2. Now transfer the mixture onto a lightly floured work surface, start working again to make a sausage,  cut it into 18 pieces  and roll them into balls.
  3. Once this is done, crush the balls with lightly floured hands to create thin disks, pierce them in the center with a very small mold to obtain donuts and place them in a dripping pan lined with special paper.
  4. Finally, cook  in a preheated oven for 20 minutes at a temperature of 180°C . At the end, let the biscuits cool and dust them with a little icing sugar.
