This zucchini snack is so flavorful and delicious, you could eat the whole jar in one sitting! They are perfect as a stand-alone snack or as a complement to main courses.

Here’s how I prepare them:
First, wash the zucchini and cut them into circles about two centimeters thick.
Then heat the vegetable oil in a frying pan and fry the zucchini until golden brown.
After frying, remove excess fat by gently blotting the zucchini with paper towels.
Then chop the garlic using a press and finely chop the dill and parsley.
Pour vegetable oil into a sterilized liter jar, add vinegar, salt, chopped garlic and herbs and place the prepared zucchini slices, leaving about 2 cm free up to the neck of the jar.
We close the jars with lids and place them on a towel in a saucepan, then fill them with warm water up to the necks and sterilize them for 40 minutes after boiling.
After sterilization, screw on the lids, turn the jars over and leave to cool.
We store the finished zucchini in a cool place, for example, in a basement or pantry.
If desired, you can add hot peppers and various spices to the jars for flavor.
