Let’s make an incredibly tasty and refreshing homemade kvass that is in no way inferior to the store-bought one.

The simplicity of this recipe will pleasantly surprise you, and all the necessary ingredients are most likely already in your kitchen.

First, boil the water and pour it into a large bowl or saucepan.

Add 2 tablespoons of chicory, half a teaspoon of citric acid and 4-5 tablespoons of sugar to hot water.

Mix everything thoroughly until the ingredients are completely dissolved.

Let the mixture cool to a warm state, approximately to a temperature suitable for yeast dough.

After cooling, add half a teaspoon of dry yeast to the liquid and mix everything well again.

Pour the resulting drink into a 1.5-liter bottle, leaving some space for the yeast to be active.

Do not fill the bottle to the very neck.

We leave the bottle in direct sunlight for 3-4 hours to start fermentation.

Then we move it to the refrigerator to cool.

Homemade kvass is moderately sweet, with a pleasant foam and a refreshing taste. Thanks to the addition of chicory, kvass acquires a dark color and taste very similar to high-quality store-bought kvass, but without the use of burnt sugar.
