How to make stewed chicken with potatoes and peas
1. Prepare the soffritto
Start by finely chopping the onion, carrot and celery.
Brown them in a large saucepan with a drizzle of extra virgin olive oil, over medium heat, until they are well wilted.
2. Brown the chicken
Add the chicken pieces and brown them on all sides for about 5-7 minutes, until golden.
Pour in the white wine and let the alcohol evaporate completely.
3. Add the tomato sauce and potatoes
Pour the tomato puree, season with salt and pepper and add the potatoes cut into not too small pieces. If you want, you can add a sprig of rosemary or a bay leaf for flavor.
Cover with a ladle of hot broth or water, lower the heat and leave to cook with the lid on for about 25 minutes.
4. Add the peas and finish cooking
Add the peas and continue cooking for another 15-20 minutes, until the potatoes are soft and the chicken is cooked through.
If necessary, add more liquid during cooking to maintain the right level of moisture.
Check the flavor and adjust salt and pepper before serving.
Tips for a perfect result
- If you prefer a creamier consistency, you can lightly mash some potatoes at the end of cooking.
- For a stronger flavour, you can also use pieces of chicken with the skin, which will make the sauce richer.
- You can replace the peas with green beans or add some green olives for variety.
- Stewed chicken is even better if left to rest for a few hours before serving, it will be perfect the next day.
