ALMOND CAKE without milk and butter!

The recipe to prepare it soft:
Ingredients:

Shelled almonds 180 g
Eggs 120 g
Granulated sugar 80 g


Wholemeal flour 40 g
Baking powder 1 heaped teaspoon Icing
sugar to taste

Preparation:

1. Place the shelled almonds in the bowl of a kitchen mixer.


2. Blend for a few moments until you obtain a coarse consistency.
3. Shell the eggs in a bowl and add the sugar.
4. Beat the eggs with the sugar using an electric whisk for about 3-4 minutes.


5. The mixture should be fluffy and light.
6. Add the chopped almonds to the whipped eggs.
7. Mix gently with a spatula from the bottom up.
8. Add the wholemeal flour and sifted yeast.


9. Mix gently and pour the mixture into a 20 cm mold lined with baking paper.
10. Bake at 180 °C in a static oven for about 40 minutes, leave to cool, sprinkle with icing sugar and serve.
