Ingredients:

  • 2 large or 3 medium green salads
  • 150 g smoked ribs, boneless and skinless                                
  • One large onion, peeled
  • One medium parsnip, peeled
  • A small parsley root, cleaned
  • A bunch of parsley, chopped
  • 1.5 L of vegetable soup, prepared with cube-type concentrate
  • 2 cups of milk
  • A spoonful of flour
  • 1/2 teaspoon salt
  • 2-3 tablespoons white wine vinegar

Cut the ribs into strips and brown them over medium heat in a pot.

Tip: you can use kaizer or smoked bacon instead of ribs

While browning the ribs, finely chop the vegetables and then add them to the ribs.

Sauté the mixture for 3-4 minutes, then add the flour and mix well until it is incorporated into the fat. Now add the hot soup together with the milk.

Simmer the soup over low heat.

Meanwhile, cut the lettuce into squares, and after 15 minutes add it, along with the spices, to the soup. Continue boiling for 5-6 minutes, then add the vinegar and turn off the heat.

Finally, add the chopped parsley.
