A zucchini masterpiece, better than pizza! Just grate 2 zucchini! Simply delicious!

Ingredients:

2 zucchini, grated

1 red onion, sliced into half rings

1 carrot, grated into strips

3 cloves of garlic, chopped

1 red bell pepper, cut into strips

1 yellow bell pepper, cut into strips

Salt, to taste

Paprika, to taste

Garlic powder, to taste

3 eggs

250 ml of milk

200 g of all-purpose flour

1 tablespoon of baking powder

150 g of cheese, grated

50 g of ketchup

50 g of mayonnaise

40 ml of soy sauce

Spring onions, chopped, for garnish

Vegetable oil, for frying and greasing

Instructions:

Grate the zucchini and add a pinch of salt.

Let it rest for 10-15 minutes to draw out moisture.

Preheat your oven to 180°C (356°F).

In a pan, sauté the red onion in vegetable oil over medium heat for 2-3 minutes.

Add the grated carrot to the pan and fry for another 2-3 minutes.

Introduce the chopped garlic and continue to fry for 1-2 minutes.

Add the red and yellow bell pepper strips, sprinkle with salt, paprika, and garlic powder.

Cover and let it cook for 5-7 minutes.

While the vegetables are cooking, squeeze the excess moisture out of the zucchini.

In a large bowl, beat the eggs with salt, then stir in the milk, flour, and baking powder.

Mix well until you have a smooth batter.

Combine the fried vegetables with the squeezed zucchini and the batter.

Line a baking sheet with parchment paper and lightly grease with vegetable oil.

Spread the vegetable and batter mixture onto the baking sheet.

Sprinkle the grated cheese evenly over the top.

Bake in the preheated oven for 25-30 minutes, or until set and golden brown on top.

For the sauce, combine ketchup, mayonnaise, and soy sauce in a small bowl.

Chop some spring onions and mix them into the sauce.

Once baked, allow the zucchini bake to cool slightly before cutting into pieces. Serve with the prepared sauce and garnished with additional spring onions.
