
Ingredients:
1 kg potatoes
1 teaspoon salt
Pepper to taste
1 teaspoon oregano
Vegetable oil (for frying)
1 onion, chopped
3 sausages (~150g total), sliced
300g cherry tomatoes, halved
100g cheese, grated
Instructions:
Prep Potatoes:
Boil potatoes until soft.
Soak boiled potatoes in cold water for 2 minutes, then peel and grate.
Mix Base:
In a bowl, combine grated potatoes, eggs, salt, pepper, and oregano. Mix well.
Prepare Oven and Pan:
Preheat your oven to 180°C (356°F).
Lightly oil a baking dish.
Cook Vegetables and Sausage:
In a frying pan, heat some vegetable oil over medium heat.
Add chopped onions and sliced sausages; fry until onions are translucent and sausages are slightly browned.
Add cherry tomatoes and fry for an additional 2 minutes.
Assemble Casserole:
Spread the potato mixture in the prepared baking dish.
Evenly distribute the sausage and tomato mix over the top.
Sprinkle grated cheese over everything.
Bake:
Bake in the preheated oven for 30 minutes, then check if the top is lightly browned.
If not yet golden, continue baking for about 20 more minutes or until the cheese is bubbly and golden.
