We choose small-sized potatoes; I use the “Mini” variety. We wash it thoroughly, peel it and put it in the pan. If you have large potatoes, just cut them into pieces. New potatoes that don’t need to be peeled are also great. Pour enough cold water to cover the potatoes, add a teaspoon of salt. Place the pan on the fire and wait until it boils. Remove the foam and after the start of boiling, cook for exactly three minutes – it is important not to overcook.
The next step is preparing the flavorful dressing. In a separate container, mix three tablespoons of vegetable oil, half a teaspoon of salt, paprika, Provençal herbs, finely chopped garlic and pepper to taste. Mix and combine with potatoes so that the dressing evenly covers each piece. Place the potatoes in a baking dish in a single layer and add pieces of butter.
Place in an oven preheated to 190-200 degrees and bake for 25-40 minutes until golden brown. Baking time varies depending on the size of the pieces and oven power. If desired, before serving, you can sprinkle the potatoes with finely chopped herbs and add more garlic.
