Soft Cheesecake Recipe “Puszek”
Sponge cake base and soft cream cheese: a dessert that conquers at the first bite.
Ingredients and preparation
Soft sponge cake type base:
- 1/2 stick of margarine
- 1/2 cup sugar
- 1 sachet of vanilla sugar
- 2 egg yolks
- 1/2 cup wheat flour
- 1/2 cup potato starch
- 1 teaspoon baking powder
- 1 tablespoon vinegar
- 2 egg whites beaten until stiff
Beat the margarine, sugar and vanilla sugar until you get a soft cream.
Add the egg yolks, flours, yeast and vinegar. Mix well.
Gently fold in the egg whites whipped until stiff with a spatula.
Pour into a pan and bake at 180°C for about 15 minutes until golden.
Cream cheese:
- 8 eggs
- 1 kg of spreadable cheese (bucket type)
- 2 cream puddings (large packs)
- 1 glass of sugar
- 500 ml whipping cream (36% fat)
Beat the egg yolks with the sugar, then add the cheese and the puddings. Work until you obtain a smooth cream.
Incorporate the whipped egg whites, mixing delicately.
Separately, whip the cream until stiff and add it to the cream cheese, mixing with slow movements.
Pour the cream onto the already cooked base.
Cook in a static oven at 180°C for approximately 1 hour.
