Ingredients
For the cream:

300 ml of milk
1 egg yolk
10 g vanilla sugar
3 tablespoons of sugar
2 tablespoons cornstarch


For the dough:

  • 2 eggs
  • 100 g of sugar
  • 100 ml of sunflower seed oil
  • 300 g of 00 flour
  • 10 g of baking powder
  • Grated zest of a lemon

Furthermore:

  • 80 g of diced peaches in syrup

Preparation

Cream:
In a small saucepan, combine the milk, egg yolk, vanilla sugar, regular sugar, and cornstarch. Cook over medium heat, stirring constantly, until the cream thickens. Pour into a piping bag and let cool.

Dough:
In a bowl, mix the eggs with the sugar and oil. Add the flour, baking powder and lemon zest. Work the dough until you get a smooth ball. Divide it into two parts: put one part in the freezer for a few minutes.

Roll out the other half to a thickness of about 5 mm and, using a cookie cutter, cut out circles. Place them on a baking tray lined with baking paper.

Filling:
On each circle place a few peach cubes and a small amount of cream.

Topping:
Grate the cooled portion of dough over each cookie, creating a “crumble” effect.

Baking:
Bake at 180°C for 15–20 minutes, until the biscuits are golden. Let cool before serving.
