Here is the long-promised recipe for fried pies! The dough turns out great, I highly recommend trying it.

Dough:
I dissolve the yeast in warm water, then add sugar, salt and vegetable oil.

Gradually add flour and knead the dough.

The dough should be soft and not stick to your hands.

Transfer the dough to a bowl greased with oil. Cover and leave to ferment for 2 hours. After an hour, knead the dough.

Potato filling:
Boil the potatoes until tender and turn them into puree.

Finely chop the onion and fry in vegetable oil until golden brown.

I add fried onions to the mashed potatoes, salt and pepper to taste. Mix well and leave to cool.

Forming and frying pies:
I divide the finished dough into 20 parts, form them into balls and place them on a greased board.

The dough does not stick to your hands, so it is very convenient to work with it. Cover the preparations and leave to rest for 10 minutes.

I heat the oil over medium heat to 170-180 degrees.

I stretch each ball of dough into a flat cake.

Place a tablespoon of filling in the center of each flatbread. I pinch the edges to form a pie.

I form and fry pies, 2-3 pieces at a time. I don’t use flour for molding.

I dip the pies into hot oil and fry on both sides until golden brown.

I place the finished pies on a paper towel to remove excess oil.

They make wonderful pies! Soft dough with a crispy crust. The pies are eaten instantly!
