I think you will agree that a festive feast is a real art, and every housewife strives to surprise and delight her guests with delicious dishes.
Today I want to offer you an interesting idea: snack tartlets with a spectacular appearance and a very tasty filling, reminiscent of the famous Herring under a Fur Coat salad!

Step by step recipe:
To prepare these tartlets we will need baskets with a diameter of 6-7 cm.
Cut pre-boiled, cooled and peeled carrots and beets into desired shapes and place in a bowl.

Add cottage cheese or cream cheese and puree everything together until smooth.

Despite the presence of herring in the appetizer, the mixture should be lightly salted and peppered.
Mix thoroughly and set aside for now.
To garnish, cut the herring fillets into thin slices equal to the number of tartlets (one slice for each tartlet) and set aside.

Cut the remaining fillet into small cubes and place in a small bowl.

Cut a medium-sized purple onion into very small cubes and add to the herring.

Stir and add a spoonful of vegetable oil if necessary (I didn’t add it because my herring fillet was already in the oil).
Quail eggs must first be boiled in salted water for 4 minutes from the moment of boiling, then cooled and peeled.

Cut the eggs lengthwise into 4 pieces – they, like the herring slices, will be used for decoration.
Now that all the ingredients are prepared, place the beet-cream mixture into a piping bag fitted with a small shaped tip.
Place the empty tartlets on the dish on which you will serve them, and place the herring and onion mixture on the bottom of each basket.

If you have the time and desire, you can make the baskets yourself from shortbread, sour cream, puff pastry, curd or potato dough. But I used ready-made tartlets to show how quickly and easily you can prepare this wonderful cold appetizer!
Squeeze the beetroot and cream mixture into rosettes from a pastry bag onto the herring mixture.

Place a slice of chopped herring on the side of each tartlet, and two slices of quail eggs on the opposite side.

Garnish the appetizer with herbs and serve!

If you prepare all the products in advance and store them in the refrigerator in a closed container, then it will take you no more than 10 minutes to decorate the tartlets!
