Jam is perhaps the most popular way to preserve fruits and berries, but today I won’t cook anything. Instead, I’ll share with you our family’s favorite recipe for keeping our harvest fresh for the winter.

Cooking raspberries and blackcurrants with sugar
First, let’s prepare the raspberries. I have 1.5 kg of fresh berries that need to be sorted and the stems removed. There is no need to wash the berries.

Pass the raspberries through a meat grinder, then add sugar. For 1 kg of berries you will need 1.5-2 kg of sugar, depending on the acidity of the berries. Pour the sugar into the chopped raspberries and stir thoroughly until the sugar is completely dissolved. For best results, leave the mixture at room temperature for 3-5 hours, stirring occasionally with a wooden spoon.
A large amount of sugar is necessary, as it acts as a preservative, preserving the vitamins, taste and aroma of fresh berries throughout the year.
The stirring process creates a thick raspberry syrup. It is important that it does not need to be heated or boiled!
This method can be used to prepare almost any fruit and berries: blueberries, lingonberries, cranberries, blueberries, strawberries, blackberries, honeysuckle, black and red currants, plums, sea buckthorn, apricots, feijoas, cherries and others.

Now let’s deal with blackcurrants. You don’t need to wash the meat grinder after raspberries. Currants need to be cleared of twigs and sepals, rinsed thoroughly and allowed to drain. Grind the berries in a meat grinder and add sugar in the same proportions: for 1 kg of currants – 1.5-2 kg of sugar.
Mix the resulting mixture thoroughly and leave at room temperature for 3-5 hours, stirring occasionally with a wooden spoon.

I have a jar of raspberries from last year, and I want to show you what this preparation looks like a year later. The berries, well mixed with sugar, produce a jelly that stores well.
Pour the prepared berry mixture into dry, sterilized jars and close with lids – tin or nylon. There is no need to twist or sterilize. Store the workpieces in a cool place such as a basement, cellar or refrigerator. In this form, the berries can be stored for more than a year.

They can be used as jam for tea, served with pancakes and pancakes, prepared into compote, added to homemade yogurt, or used as a berry layer when making cakes and desserts.
