Night before making..

2 cups raisins (can swap mix and match dried craisins)

2 cups boiling water

4 tsp baking soda

Boil water. Put raisins in large pyrex mixing bowl and sprinkle baking soda over the raisins. Pour boiling water over the raisins baking soda mix. Stir until dissolved. Let sit overnight or 6 to 8 hours.

Next morning or 6 to 8 hours later

2 cups granulated sugar (or cinnamon sugar mix to taste)

1/2 tsp salt

1/4 cup vegetable or canola oil

4 cups flour

Fold in sugar, oil, salt to raisin mix. Stir in flour one cup at a time. Dough will be thick.

Bake in 3 metal 1lb coffee cans, criscoed and floured.

Bake at 350 degrees for 60 to 75 min or until a long thin skewer comes out clean. Let sit for 5 min or so before removing from cans.

Can use two banana bread loaf pans if no coffee cans available.
